Sarde a “beccafico in Acireale
Ingredienti per 4 persone
600 gr. di sarde
150 gr. di pangrattato
50 gr. di parmigiano grattugiato (o pecorino)
3 uova
farina
1 spicchio d’aglio
olio d’oliva, aceto, sale pepe, prezzemolo tritato
Nettare le sarde, diliscarle e metterle a bagno nell’aceto.A parte preparare un composto con il pangrattato, olio, sale, pepe, aglio e prezzemolo. Incorporarvi un uovo sbattuto, il formaggio e mescolare con cura. Scolare le sarde e ricoprirle, ad una ad una, con un po’ del composto e con un’altra sarda, quindi passarla nell’uovo sbattuto e nella farina e friggerle in abbondante olio bollente finché saranno dorate. Sgocciolarle e metterle su un foglio di carta paglia affinché perdano l’unto superfluo. Servirle calde.
